Remember celebrating St. Patrick’s Day in your college years? Me either. All that lime green PBR? Yikes.
With one of my 2016 resolutions being to celebrate more, I’ve discovered an adult way to enjoy even St. Patrick’s Day. In a way that you’ll remember.
How about a good ol’ fashioned cocktail hour hosted by… you?! Gather a small group of friends over at your place and get ready to share some favorite snacks and drinks. My husband and I planned out a mini menu for a St Patty’s evening in.
The Old Standby - Green Beer
Not just for Coors Light anymore, we made ours with Dale’s Pale Ale + green food dye. Oskar Blues is a brewery down in Brevard with beer sold all over, enjoy this local brew with a touch of green dye. The best part is the different shades of green!
Pair this with Truffle Parmesan Popcorn
1cup Unpopped popcorn kernels
¼cup Vegetable oil
4tbsp Truffle oil
¼cup Grated parmesan
1tbsp Tarragon chopped
2tsp Fresh ground black pepper
Combine vegetable and truffle oil in a large heavy bottomed pot. Heat oil over medium high heat until oil just begins to smoke. Add popcorn kernels and salt and cover the pot with a fitted lid. Gently shake the pot back and forth the make sure the kernels are in constant motion. As the kernels begin to pop continue shaking the pot until the popping decreases in intensity to a pop every other second. Immediately remove from pot into a large heat resistant bowl. Toss with tarragon, parmesan and pepper. Add additional salt if desired.
The Irish Classic- Grab any whiskey from Ireland.
Pour your Jameson (or whichever brand you choose) over a large ice cube for sipping.
Pair this with Smoked Almonds
1lb Almonds whole/skin on/raw
1tbsp Smoked salt
1tsp Chopped fresh rosemary
Preheat oven to 350. Melt the butter in microwave. Toss almonds, butter, rosemary, and smoked salt with melted butter. Spread almonds on ungreased baking sheet and bake for 8 minutes. Allow to cool to room temperature before serving.
And don’t forget the Guinness. Sláinte!
Wind down the evening with a round of cigars, pipes or, um, water.
